Bobotie!
Pronounced ba-boor-tea, the national dish of South Africa is a delicious mixture of curried meat and fruit with a creamy golden topping, not dissimilar to moussaka! A great dish for cold winter nights!
Ingredients:
Minced Beef or Lamb
Butter or Vegetable Oil
2 Onions
1 tablespoon of curry powder
half tablespoon turmeric
Crushed garlic cloves
2 slices of bread, crumbled
1 cup milk
juice of half a lemon
1 egg
1 apple - peeled and diced
half cup of raisins
Bay leaves
Topping
250ml milk
2 eggs
dash of salt
Recipe Set oven to 60 degrees celcius.
Butter casserole dish.
Heat butter in a saucepan and fry onions and garlic.
Stir in curry powder and turmeric.
Mix in meat, bread crumbs, milk, lemon, egg, salt apple and raisins.
Pile ingredients into casserole dish and bury bay leaves.
Bake for one hour.
Beat together topping ingredients in separate bowl and pour over the meat mix after the hour.
Place back in oven for a further 15 minutes until lightly brown.
Serve with rice and mango chutney.
