Breakfast Zoodles

How often do you wake up and think: I could go for a hefty serving of pasta? This recipe could change all of that. Zucchini (Courgette) noodles are topped with fried eggs, salt, and pepper for an super simple, tasty morning meal. We think there's something very satisfying about twirling your breakfast and slurping it unabashedly - BREAKFAST ZOODLES

Serves: 1 serving

INGREDIENTS 1 Tbsp coconut oil 1 small Zucchini (Courgette), spiralized 2 eggs salt pepper seasonings

INSTRUCTIONS Melt coconut oil in a frying pan over medium heat. Saute zoodles for just a couple of minutes. Crack the eggs on top of zoodles, and cover pan with a lid. Check that the zoodles aren’t burning on the bottom (most zoodles have plenty of water in them, if yours are dry you might need to add a splash of water to prevent them from burning). For a soft yolk cook for approximately 4 minutes. Season with salt, pepper and your favorite seasonings like basil or parsley, and enjoy!
