Quick Porridge with Caramelised Banana & Peanut Butter

A great source of protein and fibre, rich in antioxidants and very filling. This quick breakfast ticks all the boxes

SERVES 1 / PREP 5min / COOK 5min


1⁄3 cup rolled oats (if gluten-free, use brown rice flakes or quinoa flakes)

3 tsp crunchy natural peanut butter

2 tsp orange marmalade

1 tsp butter

1⁄2 small banana, thickly sliced on diagonal

1 tbs Greek yoghurt

2 tsp chopped peanuts


  1. Place oats, peanut butter, one teaspoon of marmalade and 3 tbs of boiling water in a small bowl and mix well. Cover with cling wrap and set aside for 3 minutes.

  2. Meanwhile, heat butter in a fry-pan over medium-high heat and cook banana slices for a few minutes each side, or until golden.

  3. Mix remaining teaspoon of marmalade with 1 tsp boiling water.

  4. Stir yoghurt through oats, top with caramelised bananas, marmalade and chopped nuts.
